1999 Jetta Oil Light Always Blinking/Beeping?

We recently put a new engine in my 2000 VW Jetta. A month ago the plug on the bottom of my oil pan somehow came off and all of the oil drained. Ever since that happened the oil light is constantly blinking and beeping every time I start it. Does anyone know why this would happen or how I can fix it?
